My Son’s Favorite Recipe: Sa-weet Sweet Potatoes

In this yummy dish, sweet potatoes move from merely a side dish to healthy, delicious dessert. The flavors blend for a treat to satisfy any sweet tooth—even kiddos!

Ingredients:

  • 2 sweet potatoes 2@$0.79
  • 1 large apple 1@1.06
  • Slivered almonds $2.23
  • Powdered cinnamon
  • Cayenne pepper (optional for adults, omit when making for children)
  • Canola oil 1 tablespoon
  • Total time: 2 hours to cook, 5 minutes to prep
  • Total cost: $4.87
  • Serves 4
  • Price per serving: $1.22

Wash the sweet potatoes. Cover the bottom of a slow-cooker with about ½ cup water (about 1/2 cup) and place the washed potatoes in the pot. Cover and cook on high for 2 hours. (This technique is easy and does not require heating the often or using the microwave for 20 minutes. The skin peels off very easily.)

When the potatoes are soft, remove them and allow them to cool for a few minutes before peeling. While they cool, heat the oil over low heat in a sauce pan. When heated, add the slivered almonds and lightly toast. Turn off the burner but leave them in the pan to stay warm while you prepare the dish. Cut the apple into small pieces.

Remove the skin from the potatoes and place in a medium sized bowl. Mash the potatoes using a fork or electric mixer. As you mash them, sprinkle in the cinnamon and cayenne pepper to taste.

Place the potatoes on the dessert plate and top with the apple bits and warm slivered almonds. Enjoy your amazing and healthy dessert!
